French Tomato & Mustard Tart

  • -2 Coeur de Boeuf tomatoes (or 4 large tomatoes)
  • -3-4 tbsp mustard original
  • -1 round store-bought shortcrust pastry (“pâte brisée”)
  • -3 tbsp “herbes de provence”
  • -1 egg (beaten, for egg wash)
  • -1 tablespoon sesame seeds
  • -1 tablespoon olive oil
  • -Flaky sea salt
  • -Black pepper
French Tomato & Mustard Tart

  1. 1Preheat the oven to 190°C.
  2. 2Place the round shortcrust pastry on a tart tin. Prick evenly with a fork.
  3. 3Spread 3-4 tablespoons of Original Mustard evenly over the pastry and sprinkle with the "herbes de provence".
  4. 4Slice the tomatoes thinly and arrange on top of the mustard (optional: leave on kitchen paper to drain for a few minutes). Season to taste with salt and pepper.
  5. 5Fold the edges of the pastry over the tomatoes. Brush with whisked egg and sprinkle with sesame seeds.
  6. 6Bake for 30-35 minutes until the crust is golden and the tomatoes are soft. Sprinkle with olive oil and a little flaky sea salt.
