- -2 large potatoes

- -1 cup shredded mozzarella or cheddar cheese

- 1Prepare the potatoes: Wash the potatoes thoroughly without peeling them. Place them in a pot, add enough water to cover them, and boil over medium heat for 15-20 minutes until they are tender. Drain the boiled potatoes and poke a few holes in the skin with a fork. Bake them in a preheated oven at 200°C (400°F) for 20-25 minutes until the skin becomes crispy.
- 2Fill the potatoes: Cut the hot baked potatoes in half, being careful not to separate them completely. Mash the inside gently with a fork. Add butter, shredded cheese, and a pinch of salt, then mix everything together until well combined.
- 3Fill the kumpir with your desired toppings. For example homemade or store-bought tabbouleh and Russian salad, sliced pickles (cornichons), boiled corn, sausages, sliced olives, and pomegranate seeds.
- 4For the preparation of sausages: Sauté sliced sausages in a little oil, then add 1-2 tablespoons of ketchup and ½ teaspoon of mustard. Cook for 1-2 minutes, remove from heat, and let the sausages cool before placing them on top of the potatoes.
- 5Finally, drizzle generously with ketchup and mayonnaise for decoration. Serve while hot. Enjoy your meal!
