  • -2 large potatoes
  • -2 tablespoons butter
  • -1 cup shredded mozzarella or cheddar cheese

Turkish Kumpir backed potatoes

  1. 1Prepare the potatoes: Wash the potatoes thoroughly without peeling them. Place them in a pot, add enough water to cover them, and boil over medium heat for 15-20 minutes until they are tender. Drain the boiled potatoes and poke a few holes in the skin with a fork. Bake them in a preheated oven at 200°C (400°F) for 20-25 minutes until the skin becomes crispy.
  2. 2Fill the potatoes: Cut the hot baked potatoes in half, being careful not to separate them completely. Mash the inside gently with a fork. Add butter, shredded cheese, and a pinch of salt, then mix everything together until well combined.
  3. 3Fill the kumpir with your desired toppings. For example homemade or store-bought tabbouleh and Russian salad, sliced pickles (cornichons), boiled corn, sausages, sliced olives, and pomegranate seeds.
  4. 4For the preparation of sausages: Sauté sliced sausages in a little oil, then add 1-2 tablespoons of ketchup and ½ teaspoon of mustard. Cook for 1-2 minutes, remove from heat, and let the sausages cool before placing them on top of the potatoes.
  5. 5Finally, drizzle generously with ketchup and mayonnaise for decoration. Serve while hot. Enjoy your meal!
