Pulled Chicken Tacos with guacamole

  • -4 chicken breasts
  • -200 ml barbecue sauce
  • -150 ml apple juice
  • -2 tbsp oil
  • -2 tsp smoked paprika powder
  • -Salt and pepper
  • -Small tortilla wraps
  • -Pickled onions
  • -Avocado
  • -Small tomatoes
  • -Jalapeños
  • -Lemon
  • -Optional: Aioli
Pulled Chicken Tacos with guacamole

  1. 1Preheat the oven to 180 degrees.
  2. 2Pat the chicken breast with kitchen paper, season with salt, pepper and sprinkle with paprika powder.
  3. 3Mix the barbecue sauce and apple juice.
  4. 4Place the chicken breast in a heatproof and oiled dish and pour over the BBQ sauce mixture.
  5. 5Bake in the oven for 30 minutes.
  6. 6Pull the chicken breast in a bowl with 2 forks.
  7. 7Mix the pulled meat with the sauce and leave in the oven for another 10 minutes.
  8. 8In the meantime, cut the avocado and mash it with a fork. Add a large squeeze of lemon juice and season with salt and pepper.
  9. 9Heat the tortillas briefly in the pan or microwave.
  10. 10Spread the avocado cream on the tortilla, place the meat on top, add the tomatoes, pickled onions and jalapenos. Finally spread some aioli sauce on top (optional).
