- -4 chicken breasts
- -200 ml barbecue sauce
- -150 ml apple juice
- -2 tbsp oil
- -2 tsp smoked paprika powder
- -Salt and pepper
- -Small tortilla wraps
- -Pickled onions
- -Avocado
- -Small tomatoes
- -Jalapeños
- -Lemon
- -Optional: Aioli
- 1Preheat the oven to 180 degrees.
- 2Pat the chicken breast with kitchen paper, season with salt, pepper and sprinkle with paprika powder.
- 3Mix the barbecue sauce and apple juice.
- 4Place the chicken breast in a heatproof and oiled dish and pour over the BBQ sauce mixture.
- 5Bake in the oven for 30 minutes.
- 6Pull the chicken breast in a bowl with 2 forks.
- 7Mix the pulled meat with the sauce and leave in the oven for another 10 minutes.
- 8In the meantime, cut the avocado and mash it with a fork. Add a large squeeze of lemon juice and season with salt and pepper.
- 9Heat the tortillas briefly in the pan or microwave.
- 10Spread the avocado cream on the tortilla, place the meat on top, add the tomatoes, pickled onions and jalapenos. Finally spread some aioli sauce on top (optional).
