Egg Salad

  • -8 eggs
  • -60 g mayonnaise (“au citron”)
  • -60 g crème fraîche
  • -2 tsp mustard
  • - ½ tsp paprika powder
  • -Salt + pepper
  • -Fresh chives
Egg Salad

  1. 1Boil the eggs for 10 minutes, then transfer them to cold water to cool. Peel and separate yolks from whites.
  2. 2Mash the yolks with mayonnaise, crème fraîche, mustard, paprika, salt, and pepper until smooth. Chop the egg whites and gently fold them into the mixture.
  3. 3Sprinkle with fresh chives and serve on toast, in a sandwich, or as a side.
