- -8 eggs
 - -60 g mayonnaise (“au citron”)
 - -60 g crème fraîche
 - -2 tsp mustard
 - - ½ tsp paprika powder
 - -Salt + pepper
 - -Fresh chives
 
							- 1Boil the eggs for 10 minutes, then transfer them to cold water to cool. Peel and separate yolks from whites.
 - 2Mash the yolks with mayonnaise, crème fraîche, mustard, paprika, salt, and pepper until smooth. Chop the egg whites and gently fold them into the mixture.
 - 3Sprinkle with fresh chives and serve on toast, in a sandwich, or as a side.
