Smashed Potatoes with Samurai Dip

- -1 kg small organic potatoes
- -4 tbsp olive oil
- -2 tsp garlic powder
- -2 tsp dried thyme
- -1 tsp paprika powder
- -Flaky Salt
- -Fresh parsley
- -Samurai Sauce (to dip)

- 1Preheat the oven to 220°C (425°F).
- 2Boil the potatoes for about 10 minutes until fork-tender, then drain and let cool slightly.
- 3Place each potato on a baking sheet and gently press down with a glass to flatten.
- 4In a small bowl, mix olive oil, garlic powder, dried thyme, and paprika powder. Brush each smashed potato with the spice mixture.
- 5Bake for 30-35 minutes until golden and crispy.
- 6Sprinkle with flaky salt and chopped parsley before serving. Serve with Samurai Sauce for dipping.
