Hashbrown Easter Nests

  • -300 g potatoes
  • -2-3 tbsp flour
  • -1 tbsp sunflower oil
  • -Salt & pepper
  • -Paprika powder
  • -Ground cumin
  • -Ground nutmeg
  • -30 g baby spinach
  • -6 eggs
  • -Andalouse sauce, for dipping
Hashbrown Easter Nests

  1. 1Preheat the oven to 190°C.
  2. 2Peel the potatoes and grate them. Put them in a kitchen towel and press out any excess liquid.
  3. 3Add the flour and oil to the grated potatoes and give it a good stir. Season with salt, pepper, paprika, cumin and nutmeg.
  4. 4Generously grease 6 muffin tins with oil, and evenly distribute the grated potatoes on the 6 tins. Use your hands to form a “nest” for the egg that will be added later. Bake the “nests” for 15-20 minutes.
  5. 5Add a few leaves of spinach in the potato “nest” and crack in the egg. Sprinkle with salt and pepper and bake for another 10-12 minutes.
  6. 6Serve with Andalouse sauce.
