  • -1 white baguette
  • -200 g smoked tofu, sliced
  • -¼ cucumber, finely sliced
  • -2 tbsp Samurai Sauce
  • -2 tbsp Hoisin sauce (or sweet soy/teriyaki sauce)
  • -Fresh cilantro
  • -Fresh mint
  • -Quick pickles:
  • -2 carrots, julienned
  • -100 g raddish (or 1 more carrot), julienned
  • -150 ml rice vinegar
  • -150 ml boiling water
  • -1 tsp salt
  • -2 tbsp sugar
Vegetarian Banh Mi

  1. 1To make the pickles, place julienned carrots and radish in a clean jar. In a separate bowl, mix vinegar, salt, and sugar until dissolved. Pour the liquid and the boiling water over the vegetables, close the lid, and let sit for at least 10 minutes.
  2. 2Sear the tofu slices in a pan for 2–3 minutes per side (optional).
  3. 3Assemble the sandwich: Spread samurai sauce on the inside of the baguette. Add tofu, pickled vegetables, cucumber slices, cilantro, and mint. Drizzle with hoisin sauce (or alternative) to finish.
