- -25-30 pieces of Yufka puff pastry triangle*
- -300g Turkish feta cheese
- -100g shredded mozzarella cheese
- -1 whole egg
- -1 cup chopped parsley
- -½ teaspoon freshly ground black pepper
- -A pinch of salt (optional)
- -vegetable oil for frying
- -*available at any Turkish stores
- 1Crumble the feta cheese and combine it with the grated mozzarella cheese in a bowl.
- 2Add a whole egg, chopped parsley, freshly ground black pepper, and a pinch of salt. Mix thoroughly.
- 3Place a yufka triangle on a flat surface. Add a tablespoon of the cheese mixture to the wide end, leaving small gaps on the sides. Fold and roll the borek tightly, sealing the tip with water (watch the recipe video on Youtube to see how to fold and roll the borek). Repeat with remaining yufka and filling.
- 4Heat vegetable oil to 185°C and fry the boreks until crispy and golden. Avoid overcrowding the pan. Place the cooked boreks on a paper towel to absorb excess oil.
- 5Serve warm or at room temperature with some ketchup and mayo.
