- -300 g potatoes
- -2-3 tbsp flour
- -1 tbsp sunflower oil
- -Salt & pepper
- -Paprika powder
- -Ground cumin
- -Ground nutmeg
- -30 g baby spinach
- -6 eggs
- -Andalouse sauce, for dipping
- 1Preheat the oven to 190°C.
- 2Peel the potatoes and grate them. Put them in a kitchen towel and press out any excess liquid.
- 3Add the flour and oil to the grated potatoes and give it a good stir. Season with salt, pepper, paprika, cumin and nutmeg.
- 4Generously grease 6 muffin tins with oil, and evenly distribute the grated potatoes on the 6 tins. Use your hands to form a “nest” for the egg that will be added later. Bake the “nests” for 15-20 minutes.
- 5Add a few leaves of spinach in the potato “nest” and crack in the egg. Sprinkle with salt and pepper and bake for another 10-12 minutes.
- 6Serve with Andalouse sauce.
